  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 170°C / 340°F.
    Line the bottom of a round cake pan with parchment paper. Do not grease the sides.
  2. Separate the eggs into two bowls.
  3. In the yolk bowl, whisk egg yolks, milk, oil, and vanilla until smooth.
    Sift in flour, baking powder, and salt. Mix until just combined.
  4. In a clean bowl, beat egg whites on medium speed. Gradually add sugar and beat until soft peaks form.
  5. Gently fold one-third of the whipped egg whites into the yolk batter to lighten it.
    Carefully fold in the remaining whites without deflating the batter.
